Foody Friday

Easy Lemon Slice

1 cup self raising flour
1 cup dessicated coconut
1/2 cup caster sugar
125g butter, melted
1/2 tsp vanilla essence

Topping
1 can sweetened condensed milk
1/4 cup fresh lemon juice
2 passionfruit/ or 1 can passionfruit (optional)

Preheat oven to 180 degrees celcius. Grease and line a baking tray (20cmx30cm)

Combine flour, coconut, sugar, butter and vanilla in a bowl. Mix well. Press into base on tray. Bake for 15 minutes.
Make Topping - Reduce oven to 140 degrees Mix ingredients together ( I didnt have any passionfruit so omitted it, but if you like it include it!)Pour over base, and bake for 10 minutes. Allow to cool, cut into squares to serve ( Keep in the refridgerator) - won't last long enough to worry about storing!!

Kumara (Sweet Potato) and Pasta Soup

1 teaspoon olive oil
1 leek, thinly sliced (use onion if you dont have leek)
700g kumara (orange sweet potato) peeled, chopped
3 cups chicken stock
1/2 tsp cinnamon
1 bouquet garni (or make your own combination of herbs)
1 cup shell pasta
chopped chives

Heat oil in a saucepan add leek. Cook stirring for 4 minutes until soft. Add kumara stirring for 5 minutes. Stir in stock, cinnamon and bouquet garni. Bring to boil. Reduce heat, simmer for 20 minutes until kumara is soft. Remove and discard bouquet garni.

Cook pasta in a saucepan until just tender. Puree soup until smooth. Return to low heat, stir in pasta. Season and add water if too thick. Top with chives and cream (if desired). Serve

Shepherds Pie

4 Potatoes peeled diced
500g ground beef
frozen vegetables
onion finely diced
worshtershire sauce
bbq sauce
gravy powder
tin tomatoes (optional)

Peel and Dice potatoes boil until soft. Mash with butter and milk, set aside. Cook onion until clear, add beef and cook until browned. Add frozen vegetables ( I used a peas, corn, capsicum, carrot mix) squirt of worstershire sauce, 1/4 cup bbq sauce and sprinkle of gravy powder. Tin Tomatoes can be added if you like tomato flavor.

Pour beef mix into casserole dish. Spread Mash potato over the top. I sprinkled breadcrumbs and a little cheese over the top of mine, but this is totally optional.

Enjoy.

Slowcooker Stew

Diced Beef
tin tomato
beef/chicken stock
carrots diced
onion diced
potato diced
pumpkin (squash) diced
celery diced
frozen vegetables (pea and corn)
small pasta ( I used shells)

Brown Beef in a frypan. Transfer to Slow cooker and add all ingredients except the pasta. Cook 5 hours. Before serving add pasta and a little gravy powder to thicken the stew. Serve on rice or with crusty bread

I am so writing these down! Yum. The Slowcooker Stew sounds so easy. I will try it when it cools down here. Right now we are doing salads and fruit mostly. TOO HOT! It got up to 87 today. That is high for our little mountain town. Thank for the great ideas. M
