Foody Friday

Not many this week... we did a Roast.. had an awesome Authentic Curry with a new Indian family from Church, had kebabs and the regulars, so this is the only new recipes for this week.
I am just adding this photo in because it makes me smile - BABY MANGOES!! Can you see them? I pass this tree in the park on my way to school each day and it makes me happy!! I had one of these bush mango trees at my house as a child and I never remember seeing them as little babies!! We love mangoes at our house.
Gluten free lemon slice

250grams Arnotts circle rice bickies
1/2 cup sweetened condensed milk
125 grams butter chopped
1 teaspoon grated lemon rind
1 cup coconut
2 tablespoons extra coconut
LEMON ICING:
1 3/4 cups pure icing sugar
1 teaspoon soft butter
1 tablespoon lemon juice (approx)

Blend or process biscuits until finely crushed. Combine milk and butter in medium pan, stir over heat until butter is melted: stand until warm. Stir in bickie crumbs, rind and coconut, mix well. Press mixture evenly over base of greased 19cm x 29cm rectangular slice pan. refrigerate 1 hour. Spread slice with lemon icing, sprinkle with extra coconut.To make the lemon icing: sift icing sugar into small bowl, stir in butter and enough juice to make a stiff paste, Stir over hot water until spreadable.

Home made Pizza

Lebanese Flat bread
Pumpkin, sliced, lightly boiled
baby spinach leaves
Feta Cheese
Tasty Cheese (or motzellarella)
bacon
pineapple pieces
tomato paste

Put tomato paste on Lebanese bread. Top with spinach leaves, Pumpkin, feta, sprinkle with cheese, Cook 15 mins. On another flat bread put bacon bits, pineapple and cheese. Cook 15 mins. Serve with Salad or Garlic Bread

Chicken and Corn Chowder
*This isn't quite what it looks like but gives you a visual
Chicken mince
onion, diced
Garlic
Chicken Stock
Cream Cheese
Can Creamed Corn

Saute onion in fry pan with butter. Add chicken mince and cook until browned. Add chicken stock (around 7 cups) and bring to boil. Add creamed corn and simmer 20 mins. Before serving take out some of the hot soup and use it to melt the cream cheese - put all back into soup. Serve with Crusty bread. This soup is VERY DELICIOUS!!

Lemon Delicious Pudding

This is almost a souffle - light and airy!
3 eggs
1/2 cup sugar
1 cup milk
1tbs plain flour
1/2 cup lemon juice
1 tbs extra sugar

Seperate Eggs. Beat yolks and sugar until light and creamy. Add milk, lemon juice and flour.

In a clean bowl whip egg whites. Until soft peaks form. Add one tbs spoon of sugar and beat until dissolved. Slowly fold into lemon mixture. Pour into greased casserole dish

Stand in a shallow tin of cold water bake 50 mins in moderate oven.
